“The Resonance restaurant takes its name from the world of jazz, with a reference to the famous Blue Note club. Here, the textures and materials interact to bring the essential contrast to my creations. Not only for the main dishes, but also for the starters, desserts and all the rest, each dish is set to music in a unique array. The REVOL collections blend perfectly with the range of Japanese flavours we have on offer. Like a conductor, I can not only play with the colours, but also the lights, textures, sizes and shapes.”
